Stringer Stagecoach Cabernet Sauv 2021 750ml june26-b1s1-5 honey and dark caramel areThe hand picked fruit was destemmed, hand sorted and moved to a combination of a closed top stainless tank and small new 60 Gallon French oak barrels for fermentation. After a 5 day cold soak the must was inoculated. During fermentation the tank was pumped over 2 3 times a day and the barrels spun to maximize extraction. The wine stayed on its skins for 21 days and pressed at dryness. The barrel fermented wine and tank fermented wine was kept separate
